Greek salad

Inspired by the two weeks I spent in Greece with my family, this Greek salad recipe contains organic tomatoes – amazing for helping with heavy metal detoxification in the body, cucumbers and peppers, which provide the cellular hydration your body needs, and a generous portion of polyphenol-rich extra virgin olive oil.  Your body needs healthy fats to produce hormones and extra virgin olive oil is among the best kind of oil you can consume. Super Simple Greek Salad

Ingredients

1 large organic English cucumber diced
1 pint organic grape tomatoes, halved
1/2 organic green bell pepper, thinly sliced
1/2 medium red / purple onion, thinly sliced

A block of organic feta cheese, crumbled feta, or Violife vegan feta
2 tbsp of capers (optional)
Salt & pepper to taste

For the salad dressing:

1/2 lemon, juiced
1/2 cup of extra virgin olive oil (first press or cold extracted)
1/2 tsp sea salt
1/2 tsp garlic powder
1 tsp dried Oregano
1/4 tsp freshly ground black pepper

Process

Dice and slice all your veggies and add to a large bowl. Prep the salad dressing separately in a smaller bowl. Combine the veggies, add the feta on top, and pour the salad dressing over everything. So easy, the kids may be able to help you with this one!
