Growing up in Europe, muesli was a staple breakfast food, so when moving to the US, I was a bit surprised that so many people ate cereal instead. Fear not, if you’ve never tried it, it’s very similar to a loaded oatmeal and I’m giving you plenty of options to make this even higher in protein as well (you’re getting a good dose from the nuts, oats, chia, and pumpkin, and hemp seeds already!).
Muesli is an oat-based dish mixed with nuts, seeds, and dried fruit and is amazing for your microbiome due to the diversity of plant-based foods it brings to the table. It’s also super adaptable, so you can easily swap out seeds, nuts, and fruits.

The BEST part about this muesli is that you can turn it into granola! I usually make the full recipe, serve it for breakfast, and will then turn the other half into granola the next day. Give this a try and let me know what you think! Be sure to tag @wellandgreat if you do!
Seed Cycling Muesli and Granola
Ingredients
This recipe makes about 8 servings of muesli or granola.
For the muesli:
4 cups of organic, gluten-free oats. This is my favorite brand.
3/4 cup raisins
1/2 cup chopped walnuts
1/2 cup sliced almonds
1/4 cup hemp seeds
1/4 cup pumpkin or sunflower seeds*
2 tbsp chia seeds
2 tbsp sesame or flax seeds*
1 tbsp Ceylon cinnamon
1 tsp Himalayan sea salt
* Use pumpkin and flax seeds for the first half of your cycle and sesame and sunflower seeds for the second half if trying to seed cycle.
For the granola:
Take half the muesli recipe and add:
1 to 1.5 cups of chopped dark chocolate or chocolate chunks
1/4 cup pure maple syrup
Finishing touches:
A few tablespoons of drippy peanut or almond butter (I recommend using organic peanut butter without any added ingredients)
Greek yogurt or almond milk, I like the Malk brand
Vanilla protein powder, Tejari is my favorite
Organic strawberries and blueberries (or any other fresh fruit you fancy!)
Process
- Mix all muesli ingredients and store in an airtight container. One serving is about 1/2 cup. Heat on the stove with almond milk for about 10 minutes, add any toppings and serve! You can also microwave this with your milk of choice, but the oats won’t be as tender.
- If you’ve used up about half the batch of muesli, add the maple syrup and toss over a large baking sheet lined with parchment paper. Preheat your oven to 375 F.
- Bake your muesli in the oven for about 15 minutes, then flip with a spatula, and bake for another 5 minutes.
- Add your chocolate and bake for another 3 – 5 minutes, until the chocolate is starting to melt, but the granola is turning brown without burning. Carefully take out of the oven and allow to cool.
- You now have granola! Once cooled, keep it in an airtight container for up to five days, but it probably won’t last that long!
