Let’s talk about healthy fats! Avocados, extra virgin olive oil, nuts and seeds, grass-fed ghee, and wild-caught fatty fish are SO great for hormone health because they help balance your moods, keep you satiated, maintain steady energy and blood sugar levels, help with fertility, and help you burn fat.

This green goddess dressing contains two healthy fats and is one of my favorite ways to dress up my salads. You could honestly toss this with whatever greens, protein, and veggies you have in the fridge and it would make any salad awesome. But, if you need some inspiration, just follow the recipe below, my green goddess!

Green Goddess Crunch Salad

Ingredients

For about 4-5 servings of salad:

For the dressing:
1 ripe avocado
1 cup organic cilantro
1 clove or garlic OR 1 tsp garlic powder
2 tbsp fresh lemon juice
2 tbsp extra virgin olive oil
1/2 tsp Himalayan pink or sea salt

For the salad:
4 cups of organic greens, I used watercress, torn into bite-size pieces
2 cups of protein of choice – I used grilled tofu, but you could also use organic pulled / shredded chicken
1 cup of sprouted adzuki beans, or cooked beans of choice
1 cup of organic red grapes, halved
1/2 cup of sliced radishes
1/2 cup diced organic cucumber
1/2 cup of organic grape tomatoes
1 8.1 oz block of Violife vegan feta, or feta cheese of choice, cut into small cubes
optional: sliced almonds to top things off

Process

  1. Sprinkle tofu or chicken with salt & pepper (to taste), grill / oven bake and set aside to cool.
  2. Add all the dressing ingredients to a small food processor or blender and blend away! Add the dressing to a large glass / salad bowl.
  3. Slice, dice, cut, and tear up the salad ingredients that need to be prepped and add to the large salad bowl.
  4. Add your protein (tofu or chicken), toss away, and enjoy! Watch your friends turn green with envy 😉
